hold on for dear life!

….and I’m not talking about the scary winds that Irene brought us last weekend. I’m talking about my New England summer! It seems to be slipping through my fingertips as we quickly approach labor day weekend. I’m just not ready to say goodbye yet.

In a valiant effort to hold on, I convinced friends of ours that we should all venture out towards the Berkshires and check out Red Fire Farm’s end-of-summer Tomato Festival, scheduled to take place rain or shine just hours before Irene’s unwelcomed arrival. Lucky for us, the storm looked to be holding off just until the evening, so we grabbed umbrellas, threw a middle finger to the sky and drove out to Granby.

The festival was adorably granola. Little tents with locally-made everything: cheese, honey, hot sauce and baby clothes. Of course, the main attraction was the famous tomato-tasting. We got in line and were promptly handed a sheet of stickers. The plan was to taste over 100 varieties of organic tomatoes, and award stickers to our top three favorites. K and I agreed on our top two: Sungold and Honeydrop. Look them up! As part of our farm share we were allowed to pick our own at no charge – so we brought home several pints and have been snacking quite happily on them.  Lately I’ve been using them non-stop for this delish and healthy energy-packed breakfast:

COLORFUL BREAKFAST TOAST

– One slice of 100% whole grain bread, toasted
Sliced summer tomato
– Sliced ripe avocado
– Flax seed oil
– sea salt

After toasting the bread, immediately smear on the sliced avocado.  I like to really smash it and spread it almost as if it were butter.  Add tomato slices, sprinkle with flaked sea salt and drizzle with flax seed oil (or olive oil – whatever healthy oil you have on hand).   Enjoy….and hold on to these final days of summertime!
